Easy Chicken Biryani Recipe at Home: A Step-by-Step Guide for Beginners

Biryani is a much-loved rice dish made with spiced meat and fragrant rice. Many people think it is difficult, but with a clear plan you can make a delicious chicken biryani at home. This beginner-friendly recipe serves about 4 people. Cooking times and spice levels vary, so taste and adjust as you cook.

Time and servings

Preparation: about 30 minutes, plus 1 hour or more for marinating.

Cooking: about 60 minutes.

Serves: 4 people.

Ingredients for the chicken

1 kg chicken, cut into medium pieces, with bone

1 cup plain yogurt

2 tablespoons ginger-garlic paste

1 to 2 teaspoons red chili powder (adjust to taste)

1 teaspoon turmeric powder

1 tablespoon coriander powder

1 teaspoon garam masala powder

Salt to taste

Juice of half a lemon

3 tablespoons oil or ghee

Ingredients for the rice

2 cups basmati rice (or another long-grain aromatic rice)

Water for boiling, plus salt

2 bay leaves

4 to 5 green cardamom pods

4 to 5 cloves

1 small cinnamon stick

1 teaspoon whole cumin seeds

Other ingredients

3 large onions, thinly sliced

2 tomatoes, chopped

3 to 4 green chilies, slit

A handful of fresh mint leaves

A handful of fresh coriander leaves

A pinch of saffron soaked in 3 tablespoons of warm milk (optional)

2 tablespoons ghee or butter for layering

Step 1: Marinate the chicken

In a large bowl, mix the chicken with yogurt, ginger-garlic paste, chili powder, turmeric, coriander powder, garam masala, salt, lemon juice and a spoon of oil. Mix well so every piece is coated. Cover and leave it in the refrigerator for at least one hour. A longer marination, up to several hours, gives more flavor. Keep the chicken refrigerated while it marinates.

Step 2: Prepare the rice

Wash the rice in cool water several times until the water looks almost clear. Soak it for 30 minutes, then drain.

Bring a large pot of water to a boil. Add salt, bay leaves, cardamom, cloves, cinnamon and cumin. Add the rice and cook until it is about 70 percent done. The grains should still be firm in the center. Drain immediately and spread the rice out a little so it does not keep cooking and become mushy.

Step 3: Fry the onions

Heat oil in a pan and fry the sliced onions on medium heat, stirring often, until golden brown and crisp. Remove them onto a paper towel. This is called "birista" and it adds sweetness and aroma. Keep half of them for layering and for garnish.

Step 4: Cook the chicken

Heat oil or ghee in a heavy-bottomed pot. Add chopped tomatoes and cook for a few minutes until they soften. Add the marinated chicken and cook on medium heat, stirring occasionally, for about 15 to 20 minutes, until the chicken is mostly cooked and the oil begins to separate. Stir in half of the fried onions, green chilies, mint and coriander leaves. You should have a thick masala with a little gravy. If it is too watery, cook a few minutes more.

Step 5: Layer the biryani

Spread the chicken masala evenly at the bottom of the pot. Add a layer of the partly cooked rice on top. Sprinkle mint, coriander leaves, fried onions and a spoon of ghee. Repeat with another rice layer. Finally, drizzle the saffron milk and the remaining ghee over the top.

Step 6: Cook on "dum" (steam)

Cover the pot tightly. If the lid does not fit well, seal the edges with foil or a clean damp cloth so steam stays inside. Cook on high heat for 2 to 3 minutes, then lower the heat to the lowest setting and cook for 20 to 25 minutes. Turn off the heat and let the biryani rest, covered, for 10 minutes without opening.

Step 7: Check and serve

Gently mix from the sides with a spoon so you do not break the rice grains. Make sure the chicken is fully cooked, with no pink meat and clear juices, and that it is served hot. Serve with raita, salad, boiled eggs or a simple gravy.

Simple raita to serve with it

Mix one cup of plain yogurt with chopped cucumber, a little chopped onion, a pinch of salt, roasted cumin powder and some fresh coriander leaves. Chill before serving.

Tips for better biryani

Use good rice. Aromatic long-grain rice gives separate, fluffy grains.

Do not overcook the rice before layering. It finishes cooking in the steam.

Use a heavy pot. It spreads heat evenly and prevents burning at the bottom.

Balance the masala. It should be thick, not watery, so the rice does not become soggy.

Rest before opening. Resting lets the flavors blend and the grains set.

Common mistakes to avoid

Not washing and soaking the rice. This makes the grains sticky.

Adding too much water to the chicken. The yogurt and onions release moisture too.

Opening the lid too often. Steam escapes and the cooking becomes uneven.

Burning the onions. Dark brown or black onions taste bitter.

Using raw or undercooked chicken. Always check it is cooked through for food safety.

Storing leftovers

Cool leftover biryani quickly and store it in the refrigerator within two hours of cooking. Eat it within a day or two, and reheat it until it is steaming hot all the way through.

Final thoughts

Chicken biryani takes some patience, but the steps are simple when you do them one by one: marinate, boil the rice partially, cook the masala, layer and steam. Try this recipe once, adjust the spices to your taste and make it your own.
